An afternoon arrival and a walk through a Tabora market to see the staple ingredients — maize, sweet potato, mlenda and groundnuts — before dinner and a briefing on Nyamwezi and Sukuma food culture.
Overnight: in Tabora
A full day with a Nyamwezi household preparing matoborwa (boiled, peeled, sliced sweet potato, sun-dried for months of storage) and michembe (thin raw sweet potato strips, sun-dried to a crisp) — the exact technique that gave Tabora its name.
A tasting of both, plus the fresh dishes they are usually rehydrated into.

An afternoon with a Sukuma family living in the Tabora area, comparing how the same base ingredients turn into slightly different dishes between the two cultures.
Overnight: in Tabora
A morning transfer to Tabora Airport for your return flights via Dar es Salaam, which end the safari.
When to travel
Runs year-round, though the ingredients change with the season: sweet potato processing (matoborwa, michembe) follows the harvest, and mlenda (wild jute) for nswalu is most abundant in the rainy months. We confirm which dishes are in active preparation on your dates once we have your travel window.
